Red Gold Tomatoes

 I am always looking for tasty main dish recipes that are easy to prepare and full of flavor.  This year’s Summer Grillin’ Party doesn’t disappoint.  There are six new recipes: the spicy tomato burger, Caribbean chicken burger, grilled tuna burger, stuffed portobello mushroom burger, goat cheese stuffed portobello mushroom burger, and Italian turkey burger.  Find these great recipes, as well as many more,  here!

During fall, winter, and spring, it’s tough, if not impossible, to find tasty tomatoes in the grocery store and at the markets where we shop.  So I turn to canned tomatoes, because I prefer their texture to that of unripe and mealy wintertime tomatoes.  They also make a great pantry staple that can be used in a wide variety of recipes.

I tried the Caribbean chicken burger recipe, because my family loves cilantro flavored foods.  We have a weekly taco night, that features tomatoes, guacamole, lettuce, and cheese to their hearts’ content!  So, this the Caribbean chicken burger recipe was right up our alley!


Red Gold’s Caribbean Chicken Burger Recipe

Yield ~6 burgers

1 pound ground chicken
1 (14.5 ounce) can Red Gold Petite Diced Tomatoes with Lime Juice & Cilantro
or 1 (14.5 ounce) can Red Gold Petite Diced Tomatoes with Chiptole, drained very well
1 egg beaten
1/4 cup bread crumbs
Salt and pepper to taste
6 pieces lettuce
6 slices Colby-Jack cheese
6 hamburger buns, buttered and lightly toasted
condiments, as desired (we only used ketchup)

  1.  Combine the ground chicken and Red Gold Petite Diced Tomatoes variety that you are using with the egg, and bread crumbs in a mixing bowl.
  2. Form into four (4) patties, and season to taste with salt and pepper, if desired.
  3. Place on a pre-heated grill, and cook to a mininmum of 160º for completely cooked burgers.
  4. Options: Serve with your choice of guacamole, avocado slices, or roasted pineapple slices.  Can be topped with mango chutney or fruit salsa as well.

    This has me drooling and it’I love Red Gold Tomatoes and I love the company. Some of their employees vacation up here and always bring samples to share and that good will goes a long way. When we start stocking our cupboards you better believe we add Red Gold!
