I wanted a baked oatmeal recipe that included both fruit, and packed a protein punch, without being overly sweet. I have a really hard time getting my husband to eat fruit, so I included both banana and apple. The ground flax boosts healthy fats, fiber, and protein, while thickening the mixture.
I make the baked oatmeal batter in my KitchenAid mixer using the batter attachment. I store the baked oatmeal tightly covered in the refrigerator, and it keeps for a few days, if it lasts that long!
2 very ripe medium sized bananas
1/4 cup honey
1 1/2 cups milk
1 1/2 teaspoons vanilla
2 cups rolled oats
1/2 teaspoon baking powder
pinch sea salt
1/4 cup protein powder
1/4 cup ground flax
1/2 red apple, shredded
Preheat oven to 375°. Grease a 9×9 pan, and set aside.
Mash bananas, but leave them with few chunks. Add remaining liquid ingredients, and blend well.
Add dry ingredients, and mix to combine. Fold in the shredded apple.
Bake at 375° for 35 minutes, until set.
Serve warm, topped with syrup, honey, Greek yogurt, or fruit, if desired.
